Israeli Cucumber Salad

Israeli Cucumber Salad

This salad is too cool for school – it just stares you down like it’s the reason that your life is spectacular and you should adore it as such. The recipe is wicked simple – just a little chopping and a light vinaigrette of olive oil and lemon juice to hold it all together. Continue reading

Green Salad with Lazy Vinaigrette

Green Salad with Lazy Vinaigrette

The art of the homemade vinaigrette is essential for every cook, but is truly as complicated as boiling water. With all the hype that we place on pre-made salad dressings, there’s a need for a call to action with this simple salad topper. You simply twirl a bit of fruity olive oil and bright vinegar around a large bowl and toss. Done. Continue reading

Tabbouleh

Simple Tabbouleh

Traditionally made with bulgar that is soaked until tender, I’ve been known to shave a bit of time off the prep work by using whole wheat couscous. Parsley and tomato are standard, but feel free to experiment with the other greenery and veg – my favorite is the inclusion of crisp cucumber and slivers of scallions, along with plenty of mint to keep the flavors cool and fresh. Continue reading

Orzo Salad with Arugula and Mizithra Cheese

Orzo Salad with Arugula and Mizithra Cheese

In lieu of the traditional radiatore pasta or bowties for a potluck stunner, why not outstanding orzo? This particular combination features peppery arugula, sweet tomatoes and salty mizithra cheese all gussied up with a light vinaigrette. It looks sunnier than Miss America in the Sahara desert. Continue reading

Summer Salad of Fingerlings, Heirloom Tomatoes and String Beans

Summer Salad of Fingerlings, Heirloom Tomatoes and String Beans

This salad is a winner for the spontaneous and the planners alike – during the summer, heirloom tomatoes are readily available and simply begging to be tucked into. Green beans are crisp and sweet and ready to snap the ends and crunch away. You can even access buttery heirloom potatoes for use in this salad that come in just about every shade. The entire salad is held together by a basil vinaigrette that manages to brighten and highlight all of the flavors of the veggies. Continue reading

Arugula Salad with Truffle Vinaigrette

Truthfully, though the taste is haute, the ingredients themselves are not terribly expensive or hard to come by. With the truffle oil as your only splurge, the real luxury comes from the lovely combination of flavors and texture. Continue reading

California Cobb Salad with Green Goddess Dressing

In plating this salad, I love a careful presentation of each ingredient segmented into its own section. Something about the vibrant colors in their own spots just waiting to be mixed together with the lovely dressing is an impressor and a half. As you know, it’s all about the presentation. Continue reading

Simple Pasta Salad with Roasted Peppers, Ham and Peas

My sister Lexi refuses to eat mayo based cold salads, or as she likes to say, questionable sauces. This recipe is anything but questionable – the familiar flavors of rosemary, mustard and ham elevate this pasta salad to another level, giving savory zing to where else there might be bland mayo. Continue reading

Buttermilk Poppy Seed Dressing

The allure of the tangy buttermilk combined with the sweet and tart cider vinegar is absolutely unbeatable. And the poppy seeds give the whole mixture lovely color and added pizazz. Continue reading

pastasalad

Greek Pasta Salad

I like this pasta salad because it’s made from simple ingredients that most people love, and the flavors are bright and tasty. Nothing strange here – just crisp veggies and curly pasta sopping up lemony vinaigrette. Continue reading

clementinesalad

Mixed Greens with Clementines and Pecans

I love this salad because it screams Springtime even though it’s made with ingredients that are delicious in the winter. When you are feeling that your menus are lugubrious with heavy stews and dull, overcooked madness, you should give this a try. Continue reading

Sesame Mandarin Salad

This salad is inspired by the delicious concoction that my buddy Maureen used to whip up for all of us working at the Learning Resource Center at NOVA. Perfectly tangy, crunchy, and sweet – it was probably the most requested item at our potlucks and parties. Remind me to beg her for her recipe sometime. Continue reading

Thai Chopped Salad with Crisp Noodles and Herbs

This particular recipe reminds me of all of my favorite things about a salad – exceedingly crisp, ultra light, and super refreshing. Matchsticks of carrot, daikon and red bell pepper give an addictive crunch, and the crisp noodles help to soak up the yummy peanut lime dressing. Cilantro and mint add spice and sweetness, and the dressing gets a kick from a bit of chili and garlic. It’s all around goodness. Continue reading

String Bean & Heirloom Tomato Salad

Ok, maybe it’s not summer yet, but I do like it when I can get produce to do my bidding at any given season and remind me of the joys of a fruitful harvest from the garden. This salad, based on one that I fell in love with at the restaurant The Smith, is a bright assortment of crisp and tart, sweet and salty flavors. It’ll make you want to sit in a hammock and sway on a warm summer night. Continue reading

Chicken Salad with Tarragon and Apples © Photo by Angela Gunder

Chicken Salad with Tarragon and Apples

This chicken salad is the perfect marriage of sweet and savory, with the lovely zing of lemon and dijon to wake the whole thing up. Tender white meat chicken becomes moist and delicious in a fine poaching liquid of lemon and pepper. And if you can score a really good artisinal bread, it’s a treat and a half. Continue reading

French Lemon Tarragon Vinaigrette

If ever you feel like it’s a “boo-hoo eat salad at home like a dieting loser” kind of night, I strongly advise you to make this dressing. The recipe originally came from my mom – a bold mixture of lemon, garlic and olive oil packing a serious punch on whatever greens she dressed them with. It woke your ass up. Continue reading
